Creamy Cottage Cheese Pasta

Description

A quick and delicious creamy pasta dish made with cottage cheese, garlic, and Parmesan for a healthy twist on traditional creamy pasta.


Ingredients

12 ounces dried pasta (such as penne or fusilli)
1 tablespoon olive oil
3 cloves garlic, minced
1 cup low-fat cottage cheese
1/2 cup grated Parmesan cheese
1/4 cup pasta cooking water
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley


Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 10-12 minutes.
Reserve 1/4 cup of the pasta cooking water, then drain the pasta and set aside.
In the same pot, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Reduce the heat to low and add the cottage cheese, grated Parmesan cheese, and reserved pasta water to the pot. Stir until the cheeses melt and form a creamy sauce.
Add the cooked pasta back to the pot and toss to coat evenly with the creamy cheese sauce.
Season with salt and black pepper, stirring well to combine.
Remove from heat and sprinkle chopped fresh parsley over the pasta.
Serve immediately while warm.
