Description
A delicious and comforting creamy chicken and rice soup that is perfect for chilly days.
Ingredients
- 1 lb chicken breast, diced
- 1 cup rice, uncooked
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté onions, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Add diced chicken and cook until no longer pink.
- Stir in rice, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream and cook for an additional 5 minutes.
- Serve hot and enjoy!
