Description

A comforting and flavorful creamy cajun chicken pasta soup that warms your soul.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup pasta (your choice)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Add the chopped onion, garlic, and bell pepper; sauté until softened.
  4. Stir in the cajun seasoning, salt, and pepper.
  5. Add the chicken broth and bring to a boil.
  6. Stir in the pasta and cook until al dente.
  7. Reduce heat and stir in the heavy cream.
  8. Simmer for a few minutes until heated through.
  9. Garnish with fresh parsley before serving.

Notes

  • Adjust the level of cajun seasoning to your taste.
  • For a lighter version, substitute heavy cream with half-and-half.
