Description

A refreshing and nutritious salad made with quinoa, cranberries, and a variety of fresh vegetables, perfect for a healthy meal or side dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup fresh cranberries
  • 1/2 cup chopped cucumber
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup chopped parsley
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste


Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine cooked quinoa, cranberries, cucumber, bell pepper, red onion, and parsley.
  6. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Top with feta cheese if desired and serve chilled or at room temperature.

Notes

  • For a vegan option, omit the feta cheese.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to add other vegetables or nuts for extra crunch.
