Ingredients
- 3-4 lbs beef chuck roast
- 1 can (14 oz) whole cranberry sauce
- 1 packet (1 oz) onion soup mix
- 1 cup beef broth
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef chuck roast with salt and pepper.
- In a large skillet, sear the roast on all sides until browned.
- In a bowl, mix together the cranberry sauce, onion soup mix, beef broth, soy sauce, Worcestershire sauce, and garlic powder.
- Place the seared roast in a roasting pan and pour the cranberry mixture over it.
- Cover the pan with foil and bake for 3-4 hours, or until the meat is tender.
- Remove from the oven and let it rest for 10 minutes before slicing.
- Garnish with fresh parsley if desired and serve.

- For a thicker sauce, remove the roast and simmer the sauce on the stove for a few minutes.
- This dish pairs well with mashed potatoes or rice.
