Description

Cranberry Pot Roast is a delicious and flavorful dish that combines tender beef with a sweet and tangy cranberry sauce, creating a unique twist on a classic pot roast.


Ingredients

  • 3-4 lbs beef chuck roast
  • 1 can (14 oz) whole cranberry sauce
  • 1 packet (1 oz) onion soup mix
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef chuck roast with salt and pepper.
  3. In a large skillet, sear the roast on all sides until browned.
  4. In a bowl, mix together the cranberry sauce, onion soup mix, beef broth, soy sauce, Worcestershire sauce, and garlic powder.
  5. Place the seared roast in a roasting pan and pour the cranberry mixture over it.
  6. Cover the pan with foil and bake for 3-4 hours, or until the meat is tender.
  7. Remove from the oven and let it rest for 10 minutes before slicing.
  8. Garnish with fresh parsley if desired and serve.

Notes

  • For a thicker sauce, remove the roast and simmer the sauce on the stove for a few minutes.
  • This dish pairs well with mashed potatoes or rice.
