A comforting chili with lean turkey, creamy white beans, and mild spices perfect for warming up any night.
Ingredients
1 tablespoon olive oil
1 pound ground turkey
1 medium onion, diced
3 cloves garlic, minced
2 cans (15 oz each) white beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
2 cups low-sodium chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional toppings: chopped cilantro, sour cream, shredded cheese
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and sauté until translucent, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Add ground turkey, breaking it up with a spoon, and cook until no longer pink.
Stir in cumin, chili powder, smoked paprika, salt, and pepper.
Add white beans, diced tomatoes, and chicken broth.
Bring to a boil, then reduce heat and simmer for 25 minutes.
Adjust seasoning as needed and serve warm with optional toppings.
