A warm, cheesy, and hearty skillet meal combining quinoa, black beans, and taco spices for a quick and delicious dinner.
Ingredients
1 cup quinoa, rinsed
1 can (15 oz) black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup diced tomatoes with green chilies
1 small onion, diced
2 cloves garlic, minced
1 cup vegetable broth
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and garlic, sauté until translucent.
Stir in quinoa, chili powder, cumin, salt, and pepper; cook for 1-2 minutes.
Add vegetable broth, diced tomatoes with green chilies, and black beans; bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until quinoa is cooked.
Sprinkle shredded cheddar cheese over the top, cover, and let cheese melt for 3-5 minutes.
Garnish with fresh cilantro if desired and serve warm.
