Cheesy Quinoa & Black Bean Taco Skillet

Description

A comforting, cheesy one-pan meal featuring protein-rich quinoa and black beans seasoned with taco spices and topped with melted cheese.


Ingredients

1 cup quinoa, rinsed
1 can black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup vegetable broth
1 can diced tomatoes with green chilies
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons olive oil
Optional toppings: chopped cilantro, sliced avocado, lime wedges


Instructions

Preheat oven to 375°F (190°C).
In a large oven-safe skillet, heat olive oil over medium heat.
Add quinoa and toast lightly for 2 minutes.
Stir in black beans, diced tomatoes with their juice, vegetable broth, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
Bring mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is tender and liquid is absorbed.
Remove skillet from heat, sprinkle shredded cheese evenly over the top.
Transfer skillet to the oven and bake for 8-10 minutes until cheese is melted and bubbly.
Garnish with cilantro, avocado, and lime wedges as desired and serve warm.
