Description

A warm and comforting recipe for turkey meatloaf muffins, perfect for winter.


Ingredients

  • 1 lb ground turkey
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup ketchup (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, milk, salt, pepper, and thyme.
  3. Mix until well combined.
  4. Grease a muffin tin and fill each cup with the turkey mixture.
  5. Top each muffin with a spoonful of ketchup.
  6. Bake for 25-30 minutes or until cooked through.
  7. Let cool slightly before serving.

Notes

  • These muffins can be frozen for later use.
  • Feel free to add your favorite vegetables to the mixture.
  • Serve with a side of mashed potatoes or a salad.
