A warm and comforting recipe for turkey meatloaf muffins, perfect for winter.
Ingredients
- 1 lb ground turkey
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 cup ketchup (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, milk, salt, pepper, and thyme.
- Mix until well combined.
- Grease a muffin tin and fill each cup with the turkey mixture.
- Top each muffin with a spoonful of ketchup.
- Bake for 25-30 minutes or until cooked through.
- Let cool slightly before serving.
Notes
- These muffins can be frozen for later use.
- Feel free to add your favorite vegetables to the mixture.
- Serve with a side of mashed potatoes or a salad.
