Description

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped spinach
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese and eggs, and whisk until smooth.
  3. Add shredded cheese, chopped spinach, diced bell peppers, salt, pepper, and garlic powder to the mixture.
  4. Mix well until all ingredients are evenly incorporated.
  5. Grease a muffin tin and pour the mixture into each cup, filling them about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes or until the egg bites are set and lightly golden on top.
  7. Remove from the oven and let cool for a few minutes before removing from the muffin tin.
  8. Serve warm or store in the refrigerator for later use.
