Ingredients

  • 1 cup shredded coconut
  • 1/2 cup protein powder
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract


Instructions

  1. In a mixing bowl, combine shredded coconut, protein powder, almond butter, honey or maple syrup, chia seeds, and vanilla extract.
  2. Mix until all ingredients are well combined and form a sticky mixture.
  3. Using your hands, roll the mixture into small bite-sized balls.
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
