Coconut Curry Chicken Rice is a delicious and aromatic dish that combines tender chicken with a rich coconut curry sauce served over fluffy rice.
Ingredients
- 2 cups of jasmine rice
- 1 lb chicken breast, diced
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, cook the rice according to package instructions and set aside.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
- Add the diced chicken to the skillet and cook until browned.
- Stir in the curry powder and cook for another minute.
- Pour in the coconut milk and bring to a simmer.
- Season with salt and pepper, and let it cook for about 10 minutes until the chicken is cooked through.
- Serve the coconut curry chicken over the cooked jasmine rice and garnish with fresh cilantro.

- For a spicier version, add red chili flakes or fresh chilies.
