Description

A delicious and easy-to-make Classic Chicken Lo Mein with tender chicken, crisp vegetables, and savory sauce tossed with soft egg noodles. Perfect for a quick weeknight dinner.


Ingredients

8 ounces egg noodles
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breast, thinly sliced
2 cloves garlic, minced
1 medium carrot, julienned
1 cup snow peas, trimmed
1 cup sliced shiitake mushrooms
3 green onions, sliced
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1/2 teaspoon ground white pepper
1/4 cup chicken broth


Instructions

Cook egg noodles according to package instructions until al dente. Drain and set aside.
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, white pepper, and chicken broth. Set sauce mixture aside.
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
Add sliced chicken breast and stir-fry for 4-5 minutes until cooked through and lightly browned. Remove chicken from skillet and set aside.
Add remaining 1 tablespoon vegetable oil to the skillet.
Add minced garlic and stir-fry for 30 seconds until fragrant.
Add julienned carrot, snow peas, and sliced shiitake mushrooms. Stir-fry vegetables for 3-4 minutes until tender-crisp.
Return cooked chicken to the skillet with the vegetables.
Add cooked egg noodles to the skillet and pour the prepared sauce over the top.
Toss everything together gently to combine and heat through, about 2 minutes.
Stir in sliced green onions just before serving.
