  • Total Time: 25 minutes
  • Yield: 4

Description

A flavorful and zesty Cilantro Lime Chicken recipe featuring juicy chicken breasts marinated in fresh lime juice, garlic, and cilantro. Perfect for a quick and delicious weeknight dinner.

Ingredients

4 boneless, skinless chicken breasts (about 6 ounces each)
1/4 cup fresh lime juice (about 2 limes)
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup fresh cilantro leaves, chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

In a medium bowl, whisk together the lime juice, olive oil, minced garlic, chopped cilantro, ground cumin, chili powder, salt, and black pepper to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken, ensuring each piece is well coated.
Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours, to allow the flavors to infuse.
Preheat a grill or grill pan over medium-high heat.
Remove the chicken from the marinade and discard the marinade.
Grill the chicken breasts for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Garnish with additional chopped cilantro and lime wedges if desired, and serve.
