Ingredients
4 boneless, skinless chicken breasts (about 6 ounces each)
1/4 cup fresh lime juice (about 2 limes)
1/4 cup chopped fresh cilantro leaves
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a medium bowl, whisk together lime juice, chopped cilantro, minced garlic, olive oil, ground cumin, salt, and black pepper to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken, ensuring all pieces are well coated.
Seal the bag or cover the dish and refrigerate for at least 15 minutes and up to 2 hours to allow the flavors to infuse.
Preheat a grill or grill pan over medium-high heat.
Remove the chicken from the marinade and discard the remaining marinade.
Grill the chicken breasts for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before serving to allow the juices to redistribute.
