Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cocoa powder
  • 1/4 cup red food coloring
  • 1/4 cup green food coloring


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Divide the dough into three equal parts.
  7. To one part, add cocoa powder and mix well.
  8. To the second part, add red food coloring and mix until fully incorporated.
  9. To the third part, add green food coloring and mix until fully incorporated.
  10. Roll out each colored dough between two sheets of parchment paper into rectangles.
  11. Layer the colored doughs on top of each other, then roll them up tightly into a log.
  12. Wrap the log in plastic wrap and refrigerate for at least 1 hour.
  13. Slice the log into 1/4 inch thick cookies and place them on a baking sheet.
  14. Bake for 10-12 minutes or until the edges are lightly golden.
  15. Let cool on a wire rack before serving.
