Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup peppermint chocolate chips
- 1/2 cup crushed candy canes
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the peppermint chocolate chips.
- Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Use your thumb to make an indentation in the center of each cookie.
- Bake for 10-12 minutes, then remove from the oven and let cool.
- Once cooled, fill the indentations with crushed candy canes.
Notes
- Store cookies in an airtight container for up to a week.
- For a stronger peppermint flavor, add a few drops of peppermint extract to the dough.
- These cookies can be frozen for up to 3 months.
