Description
A creamy and hearty cheeseburger soup that combines the flavors of a classic cheeseburger in a comforting bowl of soup.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 tbsp flour
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the beef broth, diced potatoes, carrots, and celery. Bring to a boil.
- Reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
- In a small bowl, mix the flour with a little milk to create a slurry. Stir this into the soup.
- Add the remaining milk, Worcestershire sauce, and shredded cheddar cheese. Stir until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a spicier version, add diced jalapeños.
- Can be made ahead and stored in the refrigerator for up to 3 days.
- Freeze leftovers for up to 3 months.
