Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  4. Stir in heavy cream, shredded cheddar cheese, thyme, rosemary, salt, and pepper. Cook until cheese is melted and soup is heated through.
  5. Serve hot, garnished with additional cheese and herbs if desired.
