Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 4 cloves garlic, roasted
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, cherry tomatoes, mozzarella, and basil.
- In a blender, combine roasted garlic, olive oil, balsamic vinegar, salt, and pepper. Blend until smooth.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
