Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken, cumin, chili powder, salt, and pepper. Cook until chicken is browned and cooked through.
  3. In a bowl, layer cooked rice, black beans, corn, and diced tomatoes.
  4. Add the cooked chicken on top of the layered ingredients.
  5. Top with sliced avocado, shredded cheese, and salsa.
  6. Serve immediately and enjoy your burrito bowl!
