Ingredients
- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup shredded cheese
- 1/2 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced chicken, cumin, chili powder, salt, and pepper. Cook until chicken is browned and cooked through.
- In a bowl, layer cooked rice, black beans, corn, and diced tomatoes.
- Add the cooked chicken on top of the layered ingredients.
