Buckeyes are a delicious sweet treat made with peanut butter and chocolate, resembling the nut of the Ohio buckeye tree.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract until smooth.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill the balls in the refrigerator for about 30 minutes.
- In a microwave-safe bowl, melt the chocolate chips and vegetable oil together until smooth.
- Dip each peanut butter ball into the melted chocolate, covering it completely, and return to the baking sheet.
- Chill again until the chocolate is set.

- For a smoother chocolate coating, ensure the chocolate is fully melted and mixed with the oil.
- Store buckeyes in an airtight container in the refrigerator.
- Feel free to adjust the sweetness by adding more or less powdered sugar.
