Description

Buckeyes are a delicious sweet treat made with peanut butter and chocolate, resembling the nut of the Ohio buckeye tree.

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. In a mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract until smooth.
  2. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  3. Chill the balls in the refrigerator for about 30 minutes.
  4. In a microwave-safe bowl, melt the chocolate chips and vegetable oil together until smooth.
  5. Dip each peanut butter ball into the melted chocolate, covering it completely, and return to the baking sheet.
  6. Chill again until the chocolate is set.

Notes

  • For a smoother chocolate coating, ensure the chocolate is fully melted and mixed with the oil.
  • Store buckeyes in an airtight container in the refrigerator.
  • Feel free to adjust the sweetness by adding more or less powdered sugar.
