Ingredients

  • 3 pounds boneless beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Sear the short ribs on all sides until browned, then remove and set aside.
  5. Add chopped onion and garlic to the pot, sauté until softened.
  6. Stir in beef broth, red wine, tomato paste, Worcestershire sauce, and thyme.
  7. Return the short ribs to the pot, cover, and transfer to the oven.
  8. Bake for 3 hours or until the meat is tender.
  9. Remove from the oven and let rest before serving.
