Description
A deliciously moist and flavorful bread combining the sweetness of bananas, blueberries, and the festive taste of eggnog, topped with a crunchy streusel.
Ingredients
- 2 ripe bananas, mashed
- 1 cup fresh blueberries
- 1/2 cup eggnog
- 1/4 cup vegetable oil
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas, eggnog, vegetable oil, sugar, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the blueberries.
- Pour the batter into the prepared loaf pan.
- In a small bowl, combine the brown sugar, cubed butter, and cinnamon to make the streusel topping. Mix until crumbly.
- Sprinkle the streusel mixture over the batter in the loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For best results, use ripe bananas for added sweetness.
- Feel free to substitute frozen blueberries if fresh ones are not available.
- This bread can be stored in an airtight container for up to 3 days.
