Ingredients
- 1 pound gnocchi
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cups beef broth
- 1 cup Gruyère cheese, shredded
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large skillet, heat butter and olive oil over medium heat.
- Add the sliced onions and cook until caramelized, about 20-25 minutes.
- Meanwhile, cook the gnocchi according to package instructions.
- Add the beef broth and thyme to the caramelized onions, and simmer for 10 minutes.
- Stir in the cooked gnocchi and season with salt and pepper.
- Transfer the mixture to a baking dish, top with Gruyère cheese, and broil until the cheese is bubbly and golden.
Notes
- For a vegetarian version, use vegetable broth instead of beef broth.
- Feel free to add additional herbs like rosemary or parsley for extra flavor.
