Ingredients
- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups cooked rice
Instructions
- In a large pot, brown the beef cubes over medium heat.
- Add onions and garlic, cooking until softened.
- Stir in the tomato paste, thyme, bay leaf, salt, and pepper.
- Pour in the beef broth and bring to a boil.
- Add carrots and potatoes, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Remove the bay leaf and serve the stew over cooked rice.
