Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups cooked rice


Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in the tomato paste, thyme, bay leaf, salt, and pepper.
  4. Pour in the beef broth and bring to a boil.
  5. Add carrots and potatoes, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  6. Remove the bay leaf and serve the stew over cooked rice.

Notes

  • For a thicker stew, you can add a cornstarch slurry.
