A delicious and vibrant Banh Mi Rice Bowl that combines the flavors of traditional Vietnamese Banh Mi with a healthy rice base.
Ingredients
- 2 cups cooked jasmine rice
- 1 cup pickled carrots and daikon
- 1 cup sliced cucumber
- 1 cup cooked protein (chicken, pork, or tofu)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (optional)
- 1 tablespoon sesame oil
- 1 lime, cut into wedges
Instructions
- Prepare the jasmine rice according to package instructions and set aside.
- In a bowl, mix the cooked protein with soy sauce and sesame oil.
- Layer the cooked rice in a bowl.
- Top the rice with the protein mixture, pickled carrots and daikon, sliced cucumber, and fresh cilantro.
- Drizzle with sriracha if desired and serve with lime wedges on the side.
Notes
- For a vegetarian option, use tofu or tempeh as the protein.
- Feel free to customize the toppings based on your preferences.
