Ingredients
- 4 large bell peppers
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a large bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, and chili powder.
- Stuff the bell peppers with the mixture and place them in a baking dish.
- If using, sprinkle shredded cheese on top of the stuffed peppers.
- Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
- Garnish with fresh cilantro before serving.
