Ingredients

  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, and chili powder.
  4. Stuff the bell peppers with the mixture and place them in a baking dish.
  5. If using, sprinkle shredded cheese on top of the stuffed peppers.
  6. Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
  7. Garnish with fresh cilantro before serving.
