Ingredients
- 1 cup dried apricots
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey
- 1/4 cup protein powder
- 1/4 cup chopped nuts (optional)
- 1/4 cup shredded coconut (optional)
Instructions
- In a food processor, combine the dried apricots, rolled oats, almond butter, honey, and protein powder.
- Blend until the mixture is well combined and sticky.
- If desired, add chopped nuts and shredded coconut, and pulse a few times to mix.
- Using your hands, form the mixture into small bite-sized balls.
- Place the bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
