Ingredients

  • 1 cup dried apricots
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 cup protein powder
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup shredded coconut (optional)


Instructions

  1. In a food processor, combine the dried apricots, rolled oats, almond butter, honey, and protein powder.
  2. Blend until the mixture is well combined and sticky.
  3. If desired, add chopped nuts and shredded coconut, and pulse a few times to mix.
  4. Using your hands, form the mixture into small bite-sized balls.
  5. Place the bites on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.

Notes

  • Feel free to customize the recipe by adding your favorite nuts or seeds.
