Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup unsalted butter, softened
- 1 cup brown sugar

- 1/4 cup unsalted butter, softened (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, cream together the butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider, until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- For the filling, beat together the cream cheese, butter, and powdered sugar until smooth and creamy.
- Once the cookies are cool, spread a generous amount of filling on the flat side of one cookie and sandwich it with another cookie.
