Healthy Chicken Gyros

Description

A lighter take on the classic Greek gyro, featuring marinated grilled chicken, fresh vegetables, and a tangy yogurt sauce wrapped in whole wheat pita bread. Perfect for a healthy and flavorful meal.


Ingredients

1 pound boneless, skinless chicken breast, thinly sliced
2 tablespoons plain Greek yogurt
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
4 whole wheat pita breads
1 cup cherry tomatoes, halved
1/2 medium cucumber, thinly sliced
1/4 small red onion, thinly sliced
1/2 cup crumbled reduced-fat feta cheese
1/4 cup fresh parsley, chopped
1 cup plain Greek yogurt (for sauce)
1 tablespoon fresh lemon juice (for sauce)
1 clove garlic, minced (for sauce)
1/4 teaspoon salt (for sauce)
1/8 teaspoon black pepper (for sauce)


Instructions

In a medium bowl, combine 2 tablespoons Greek yogurt, olive oil, minced garlic, lemon juice, dried oregano, ground cumin, smoked paprika, salt, and black pepper to create the marinade.
Add the thinly sliced chicken breast to the marinade and toss until fully coated. Cover and refrigerate for at least 15 minutes.
While the chicken marinates, prepare the yogurt sauce by mixing 1 cup Greek yogurt, 1 tablespoon lemon juice, 1 minced garlic clove, salt, and black pepper in a small bowl. Stir well and refrigerate until ready to serve.
Preheat a grill pan or skillet over medium-high heat. Lightly oil the pan if needed.
Cook the marinated chicken slices for 4-5 minutes per side or until fully cooked and slightly charred. Remove from heat and let rest for 2 minutes.
Warm the whole wheat pita breads in a dry skillet or oven for 1-2 minutes until soft and pliable.
To assemble each gyro, spread 2 tablespoons of the yogurt sauce onto a pita bread.
Layer with cooked chicken slices, halved cherry tomatoes, cucumber slices, red onion slices, crumbled feta cheese, and chopped parsley.
Fold the pita around the fillings and serve immediately.
