A refreshing and crunchy Chinese Chicken Salad featuring tender shredded chicken, crisp vegetables, and a tangy sesame-ginger dressing.
Ingredients
2 boneless, skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon black pepper
6 cups shredded Napa cabbage
1 cup shredded red cabbage
1 cup shredded carrots
1 cup thinly sliced red bell pepper
4 green onions, thinly sliced
1/2 cup chopped fresh cilantro
1/4 cup chopped roasted peanuts
1/4 cup crispy chow mein noodles
3 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 teaspoon lime juice
1/4 teaspoon crushed red pepper flakes
Instructions
Place the chicken breasts in a medium pot and cover with water. Add salt and pepper.
Bring the water to a boil, then reduce heat to medium-low and simmer for 8-10 minutes until the chicken is cooked through.
Remove the chicken from the pot and let it cool slightly, then shred it using two forks.
In a large mixing bowl, combine the shredded Napa cabbage, red cabbage, shredded carrots, sliced red bell pepper, green onions, and chopped cilantro.
In a small bowl, whisk together the rice vinegar, soy sauce, toasted sesame oil, honey, grated ginger, minced garlic, lime juice, and crushed red pepper flakes until well combined.
Pour the dressing over the salad and toss to coat all the ingredients evenly.
Add the shredded chicken to the salad and toss gently to combine.
Sprinkle the chopped roasted peanuts and crispy chow mein noodles on top just before serving to maintain their crunch.
Serve immediately or refrigerate for up to 2 hours before serving.
