Ingredients
- Chicken breast – 2 cups, cooked and shredded
- Vegetable broth – 4 cups
- Spinach – 2 cups, fresh
- Broccoli – 1 cup, chopped
- Cauliflower – 1 cup, chopped
- Heavy cream – 1 cup
- Cheddar cheese – 1 cup, shredded
- Garlic – 2 cloves, minced
- Onion – 1 medium, diced
- Olive oil – 2 tablespoons
- Salt – to taste
- Pepper – to taste
- Herbs (thyme, basil) – to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until translucent.
- Add chopped broccoli and cauliflower, cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Add shredded chicken and spinach, simmer for 10 minutes.
- Stir in heavy cream and cheddar cheese, mix until melted.
- Season with salt, pepper, and herbs to taste.
- Serve hot and enjoy!
