Ingredients

  • Chicken breast – 2 cups, cooked and shredded
  • Vegetable broth – 4 cups
  • Spinach – 2 cups, fresh
  • Broccoli – 1 cup, chopped
  • Cauliflower – 1 cup, chopped
  • Heavy cream – 1 cup
  • Cheddar cheese – 1 cup, shredded
  • Garlic – 2 cloves, minced
  • Onion – 1 medium, diced
  • Olive oil – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste
  • Herbs (thyme, basil) – to taste


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until translucent.
  3. Add chopped broccoli and cauliflower, cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add shredded chicken and spinach, simmer for 10 minutes.
  6. Stir in heavy cream and cheddar cheese, mix until melted.
  7. Season with salt, pepper, and herbs to taste.
  8. Serve hot and enjoy!
